Foodborne Viruses: An Emerging Problem

This report was produced under the responsibility of the ILSI Europe Emerging Pathogen Task Force. One of the objectives of the task force was to compile all available information on emerging pathogens to identify their occurrence and fate during all known and potential processing technologies. Several groups of viruses are likely to infect humans after ingestion and are then shed via the stool. Of these, the Norwalk-like caliciviruses and hepatitis A virus are currently recognised as the most important human foodborne pathogens with regard to the number of outbreaks and people affected in the Western world. They are highly infectious and may lead to widespread outbreaks. Most documented foodborne viral outbreaks can be traced to food manually handled by an infected foodhandler, rather than to industrially processed foods. This report is intended for specialists in the field.
