Exposure Assessment of Process-Related Contaminants in Food by Biomarker Monitoring

The field of complementary approaches to exposure assessment of process-related contaminants (PRCs) in food by biomarker monitoring is still under development. In spite of the identified challenges, this paper concluded that biomarker-based exposure assessment provides an unique opportunity to more accurately assess consumer exposure to PRCs in food and thus better inform the risk assessment of the exposure to these PRCs.

The paper is available here as open access.
