This Webinar on the ‘Mycotoxin Prevention and Control: Food Processing Mitigation Strategies’ on 29 November 2016,
15.00-16.30 CET was organised jointly by the ILSI Europe Process-Related Compounds and Natural Toxins Task Force and the International Association for Food Protection (IAFP).

BACKGROUND AND OBJECTIVES

Mycotoxins are toxic secondary metabolites produced by fungi that significantly affect the quality, safety and yield of important crops for food and feed. Options to optimize food processing in order to reduce mycotoxin contamination of food and feed will be presented. This webinar will introduce the findings from a recent publication on the topic (Karlovsky et al., 2016) and provide a platform for discussion.
